Portobello Sandwiches

This is great way to get all the veggies you need for one day!


  • portobello mushroom heads (1 per person, 2 if you’re really hungry!)
  • nut butter (almond butter works well)
  • tomato
  • lettuce
  • avocado
  • onion


  1. Spread 1/4 inch of nut butter on the underside of the mushroom head
  2. Slice the rest of the vegetables and layer on top.
  3. Eat like a sandwich!
